Average farm size is 1.4 hectares per family, with adjacent gardens for cultivation of food crops such as sweet potato, taro, and cassava. Farmers have received training and assistance in financial management, gender equality, coffee husbandry and standards for processing through local partners. The harvest takes place from April through September, with selective harvest of ripe cherry, manually pulping, fermentation in traditional bilum bags, washing, and full sun-drying. In 2016, Timuza placed 1st in the National Cupping Competition.

Not the same as in the past

I've ordered Papua New Guinea for the past several years since I got some at the Marco Island Farmers Market. This latest bag was totally different. It had more of a flavored coffee taste; definitely not what I've had in the past. It's as if they put the wrong beans in the bag. This is really too bad because Papua New Guinea was one of my favorites. I hope the Matlacha Midnight I got with the same order is consistent with what I gotten in the past.

PNG Timuza

I've always loved dark roasted coffees but I never really noticed PNG as being such a special coffee until I tried this one from Jimmy's Java. I visited to website because I'd found a Grand Cru coffee bean I'd been searching for and couldn't find anywhere but here and decided to try another two beans of their's. I'm so glad I picked this one. It's obvious their roasters are masters because they are able to take any bean and turn it into a glorious experience. Whereas, most dark roasts give off a lot of smoky, chocolaty flavors, This is different. It has a sweet citrus flavor so it's not over powering, a buttery caramel flavor and some earthy notes. The flavors blend together like a symphony with Ballerinas dancing before them.
